I think it is important to say, I have not been diagnosed with Celiac Disease. I quit eating gluten before I could get a test. I am gluten-sensitive. My recipes, from the research I have done, are gluten-free. However, I do not claim to be an expert on gluten, and I know there are many products with gluten hidden inside them. Gluten has many “covers:” modified food starch, for example. Therefore, if you have been diagnosed with celiac, please make sure, from what you know about gluten, to check my recipes and recommendations. I am always open to learning, and if you know other foods where gluten is hidden, please do tell.
