The Assembly Line

It’s been awhile since I’ve made homemade chicken fingers, and honestly this is probably the most labor intensive meal I have made since we moved to California. Before this, my husband was cooking all of our meals. Then, he found a job after being unemployed for 6 months and it requires him to be gone at dinner time. 
At first, I panicked and my daughters joked, they’d starve. But, I’ve cooked before.  And thanks to Angry Spaghetti, cooking meals and sharing them here is making it fun and creative.  It’s an incentive to keep on cooking.  And…
….for tonight’s meal, we are off to the assembly line:
First we cut up three breasts into strips. I preferred this over buying chicken already cut into strips. You know, more hands on.

Then, we set up our line of dressings for our naked chicken. First we have a beaten egg. Next, we have GF flour mixed with salt, pepper, garlic salt and paprika.  Then, we have GF bread crumbs. Each strip of chicken gets dressed in each bowl, and then put into the hot oil to brown.

Voilà.  To dip, we have homemade honey mustard…

Then, serve with a HUGE baked potato and asparagus.
